fix(dependencies): update AutoMapper and Mecha.xUnit versions

Updated the AutoMapper package to version 15.0.0 and Mecha.xUnit to version 3.1.10 to ensure compatibility and access to the latest features.

- Bumped AutoMapper from version 14.0.0 to 15.0.0 in ObjectCartographer.Benchmarks.csproj
- Bumped Mecha.xUnit from version 3.1.8 to 3.1.10 in ObjectCartographer.Tests.csproj
- Adjusted MapperConfiguration instantiation in CreationAndCopy and SimpleCopy tests to include null as a second parameter
