feat(llm, anthropic): prompt caching, rate-limit handling, and more (#170)

This commit updates the Anthropic provider dependency to its latest
version, which brings support for prompt caching, rate-limit handling,
and improved tool-calling support.

The rate limit handling is handled internally by the Anthropic client,
based on the `Retry-After` header returned by the API.
