feat: add earn datasource and domain for vault mapping (#2590)

Duplicates the staking datasource and domain, creating a new earn-specific API key-focused one instead. This is then used within earn transaction mapping:

Note: the logic is mostly duplicated and to-be-later cleaned up.

- Add earn datasource
- Add earn domain
- Replace staking domain usage with earn for earn transaction mapping
- Update tests accordingly
