Docs-update (#384)

* Update documentation configuration and add new package dependencies

- Updated the .readthedocs.yaml file to enable PDF format for documentation builds.
- Added new package dependencies: `galois`, `numba`, and `sparse-transform` with their respective versions and sources in the uv.lock file.
- Included additional wheels for `llvmlite` and `numba` to support various platforms.

* Refactor .readthedocs.yaml for simplified environment setup

- Removed the use of the READTHEDOCS_VIRTUALENV_PATH variable for creating the virtual environment and running commands.
- Streamlined the installation and documentation build commands for clarity and efficiency.

* Update Python version in .readthedocs.yaml from 3.11 to 3.12 and remove PDF format option for documentation builds.

* Refactor .readthedocs.yaml to update build steps

- Changed the `copy_notebooks` step to `post_install` for better clarity.
- Renamed `build_docs` to `build` to align with standard terminology.
