Switch to jUnit Jupiter and AssertJ. (#602)

Updates the tests across several modules to use JUnit Jupiter and AssertJ, while also updating copyright years.

- Updated JUnit imports and annotations (e.g. `@BeforeEach`, `@AfterAll`, etc.)
- Replaced Hamcrest assertions with AssertJ assertions
- Updated file headers to reflect copyright changes to 2025
