Update dependencies and refactor workflow usage

- Bump `dotenvy` dependency to version 1.1.0 for improved environment variable management.
- Update `hpax` and `igniter` dependencies to their latest versions.
- Change references from `Jido.Workflow` to `Jido.Exec` in multiple files to reflect the new execution model.
- Update README examples to demonstrate the new usage with `Jido.Exec`.
