feat: ensure the _id data field is added before ingestion

BREAKING CHANGE: ensure the _id data field is added before ingestion

This undoes part of commit 4910da0bb. Having the field added before ingestion ensures we include the _id in the data before it gets into mongo and then we don't have to do any other special management of the record's id after that point, it's just another field. Overall, cleaner.
