feat!: Report all table heights for `VM::profile`

Additionally, report the padded height of the execution trace. The
padded height is one of the most important performance characteristics
for proving.

BREAKING CHANGE: Mark struct `ExecutionTraceProfile` as
`#[non_exhaustive]` and add field `padded_height`.

124 of 127 new or added lines in 2 files covered. (97.64%)
