improve options ergonomics, change to direct With methods

- Delete `options.go` and `options_test.go` files, as they are no longer necessary.
- Refactor `New` and `NewStateful` functions in `pool.go` to accept options via method chaining instead of function parameters.
- Update test cases and examples in various files to use the new method-chaining style for setting options.
- Update README and documentation to reflect the changes in API usage for configuring pools.
