refactor!: encoding functions now also return the iodata size

Also, prepend encoded fields to the accumulator.

Benchmark shows a speedup ranging from ~15% to ~40%, at the cost of an increase of memory consumption ranging from ~17% to ~40%.
However, on pathological cases of very large messages, there can can a decrease of speed of ~20%.
