refactor: rename variables and flags for clarity

- Rename `help-labels` to `onboard-labels` for consistency
- Rename `categories` to `category-labels` to better reflect usage
- Rename `onboarding-label` to `target-label` for clarity
- Update flag descriptions to be more descriptive and consistent
- Update template variables to match new naming conventions
