feat: enhance onboarding stats and reporting

- Add `UnassignedIssues` and `Contributors` fields to `Stats` struct
- Implement `generateProgressBar` function for visual progress tracking
- Update template to display progress bar, unassigned issues, and contributors
- Add links to GitHub filtered views for completed, in-progress, and unassigned issues

These changes improve the visibility of issue statuses and contributor activity, making it easier for users to track progress and recognize contributions.
