providers: add more tests for etcd v2 logic & fix TopologyProvider mock & error on empty rs list for etcd v2 provider.

Improvements have been made to the etcd v2 provider to correctly handle situations of incorrect topology acquisition. Mock signatures have also been fixed after version v2.
