chore: Add code coverage tools to test project

Updated `BigBook.Tests.csproj` to include `coverlet.msbuild` and `coverlet.collector` for code coverage. Re-added existing package references: `Mecha.xUnit`, `Microsoft.NET.Test.Sdk`, `xunit.runner.visualstudio`, and `xunit`.
