chore: update PlantUML version, add J2V8 download scripts, and revise dependencies

- Bumped `version` to 1.1.4 and `plantumlVersion` to 1.2024.7
- Added separate scripts for downloading platform-specific J2V8 jars:
  - `get-j2v8linux.js`
  - `get-j2v8mac.js`
  - `get-j2v8win.js`
- Updated `get-vizjs.js` to align with new version check and download handling
- Modified `package.json` scripts:
  - Replaced `postinstall` with `vizjs` to download all dependencies
  - Simplified dependency versions, replacing `coveralls` with `codecov`
  - Updated dev dependencies: `commander` to ^11.x and `nyc` to ^17.x
- Refined file patterns in `files` to include all JAR files in `vendor/`
