Commit Message

build: Fine tune the coverage gathering

Scope `--coverage` flag for the target at hand (the mender-mcu static
library). Setting it globally extends to dependencies and beyond.

And modify the exclude paths to make it more explicit (and to remove the
uncommented line - with no value any longer).

Ticket: MEN-7526
