Use consistent ellipsoids for proj transformations

For #405, `create_proj_string` and  `_get_default_pyproj_projection` will now automatically create CRSs with consistent ellipsoids when transforming. This will ensure that pyproj>=3.7.0/proj>=9.4.

The change in test reference FITS files is just for the LON-CENTRIC backplane, where some values have changed from `-180` to `180` - i.e. there is no real change in the coordinate values :)
