Refactor mock script documentation.

As part of the issue on old-style mock scripts we reviewed the
documentation, existing mock scripts and the mock script code.

We made several changes including:

1. Refactored the documentation to clarify the mock concept and
command usage.

2. Marked the test mock script scripts as to whether they use the
old or new-style mock interface and removed one script that was no
longer required.

3. Made some changes to the connection save command documentation
and modified the tests for the connection commands.

This pr is a set of changes to the documentation for mocking and mock
scripts

We did not add deprecated warning to use of the old-style script because
that is already in place.
