Update CI pipeline for cross-platform and multi-version testing

- Added matrix strategy to run unit tests on both Java 8 and Java 11
across Windows and macOS.
- Configured coverage and mutation testing to run only on Java 8.
- Skipped coverage and mutation testing on Java 11, while still running
other unit tests.
- Added integration tests to run on both Java 8 and Java 17 on Linux.
- Ensured all test reports and artifacts are archived for each Java
version and operating system.
- Updated paths to correctly archive test reports in the
"expense-tracker-app" directory.
