Fix/broken releases (#30)

* fix(releases): resolve issue with runtime/prod configs not matching during release, causing release apps not compile

- Updated configuration files (dev, prod, runtime, test)
- Modified application and file system watcher
- Updated user socket and router
- Removed session controller

* chore(dependencies): update dependencies

* refactor(environment): replace Mix.env() with Application.get_env(:portfolio, :environment)

Updated various modules to use  instead of  for environment checks. This change ensures consistent environment configuration access across different parts of the application.
