Refactor SiWe-related logic to use viem (#1618)

This migrates all SiWe-related logic to viem. It also adapts our implementation to accept a string `message` and parses it instead of relying on an object:

- Modify `ISiweRepository` it to accept a string `message` and` signature` (matching the SiWe standard)
- Update tests accordingly
