trivial: Find libarchive when compiling on macOS

libarchive is keg-only, which means it was not symlinked into /opt/homebrew
because macOS already provides this.

For pkg-config to find libarchive we need to add a PKG_CONFIG_PATH. Unexpected,
but whatever.
