Gdt 210 publishers refactor (#141)

* Add publishers field

Why these changes are being introduced:
* Per ADR 3 Support Aggregations on Publisher Name, implement a publishers field with new Publisher object

How this addresses that need:
* Add Publisher class and publishers field to models.py
* Update all source transforms with publishers field and corresponding unit tests

* Refactor generate_citation function

* Refactor generate_citation function to use publishers instead of publication_information and update corresponding unit tests
* Update marc_record_all_fields fixture to more accurately reflect a typical 260 field

* Add create_dates_and_locations_from_publishers method and corresponding unit tests
* Update Marc unit tests to reflect update output
*Update transmogrifier.models import for greater efficiency

* Update pyproject.toml

* Shift JSONTransformer and XMLTransformer to new modules

* Update dependencies

* Updates based on discussion in PR # 141

* Refactor create_dates_and_locations_from_publishers method to improve readability and update Publisher.kind value
* Update dependencies
