Update doc/storage_ui (#1031)

## Problem

The document describing the desired storage user interface was too
ambiguous in some parts and was not updated to reflect the latest
decisions.

## Solution

- Updated mock-ups
- Defined all those "there will be a mechanism to specify X", now there
are mock-ups exposing what are the expected options for each case.
- Updated the text in several parts to reflect the current decisions.
