Make target 'end2end_mocked' to run end2end tests against example mocked env

Details:

* Test: Added a new make target "end2end_mocked" to run the end2end tests
  against the mocked environments in the "examples" directory.
  This encapsulates the somewhat lengthy command line for running against
  the example mocked env into a simple make target.

* Documented the new make target in the development section.

* Added "make end2end_mocked" to the Githubb Actions workflow.
  At this point, the end2end_mocked test still fails with two calls not
  implemented in the zhmcclient_mock support (There are two issues open for
  that). Therefore, the Makefile ignores the pytest rc at this point.

* Combined the coverage for unit tests and end2end tests. They now
  contribute to the same single coverage data and reporting.
