refactor(jquery): remove default headers

BREAKING CHANGE: removed default accept & content-type headers as well as `dataType=json`; removed merge & retrieveBigNumbersAsString methods (base-lib); all of these settings can now be configured per operation via the `additionalHeaders` option.
