[FIX] Update names + storage of env variables to avoid conflicts + for ease of access (#124)

* update defaults and names of docker compose environment vars

* add README table with updated descriptions of all environment vars

* refactor how environment vars are stored/accessed (namedtuples)

* update tests to access env vars using namedtuple fields

* update how env vars are monkeypatched to work with global utility variables
