chore(apple pay): capture async test errors to fail faster

When there is an error thrown in an async test, Mocha will time out
instead of fail with the error that is thrown. This adds a `ensureDone`
helper function to wrap the callbacks and capture the error to the logs
so there is visibility into what actually failed.
