Switches syntax for categorical variables

to recognize `@key` column annotations on variable relations and treat
the rest of the columns that aren't annotated with `@key` as defining
the possible categories for the variable.

- Updates chunking example
- Drops supervision label column type checker
- Adjusts expected test outputs as we drop the `Categorical(N)` syntax.
