Correct configuration of jacocoAcceptanceTestReport task

JaCoCo requires the same class files at report time that were used at runtime.  Therefore, we must use the class files from the binary distribution (i.e. the shadow JAR) when generating the code coverage report, as those are the class files used for the acceptance tests at runtime.
