feat(instance-options): allow user to overwrite render calls on element.style

this change allows the user to provide a custom function responsible for applying interpolated
styles to element(s) JogWheel is instantiated on. This paves the path for integration into other
systems that do not cope well with direct uncontrolled DOM manipulations, such as React
