Restructure the Schema Unit Tests

This commit restructures the majority of the existing unit tests for Schema components to better use Moq, relying on
invocation verification and sequencing rather than actual side effects (e.g. building up strings). This required
engineering some extension methods on top of the Moq library for fluency within the unit tests and a single new
test-only component for doing call-order verifications.
