Fixed missing collections property in example playbooks

Details:

* It turns out that Ansible galaxy collections when installed to the default
  directory are not automatically found when used in playbooks. Instead,
  a playbook needs to state which collections it uses. This change fixes
  that by adding collections statements to all example playbooks, and
  by pointing that also out in the change log.
