TEST: Added additional unit tests to improve coverage of new functionality, and fixing associated bugs
* extra_dims in interpolation_manager should have used udims instead of dims
* Added a 'use_selected" attribute to NearestNeighbor so that the selector can be turned off. This covers the case where  a single point is requested at a nan-location, but nans should be ignored. The selector does not have access to the data, so it cannot select the correct region.
* Fixed time scaling in the nearestNeighborInterpolator
* Fixed coordinates in _remove_nans in nearest neighbor -- this was wrong for stacked requests.
* In NN only select the stacked dims that are available for the bounds (i.e. lat request for lat_lon source)
* Fixed stacked selector when uniform coords are requested.
