feat!: New functionalities and minor improvements to mock_data

* replace remaning hard-coded 'nfw' by halo_profile_model

* Change badgals criterion to etot > 1 rather than abs(e1) > 1 or abs(e2) > 1

* Add massdef option to mock data + change DeltaSO to optional keyword

* Adding example use of new option in demo_generate_mock_cluster

* clean notebbok

* Update notebook with new mock data API (Delta_SO is now an optional keyword)

* Fix bug in ccl.py when some sources are in front of the lens

* add some description to Example1 to highlight the mass bias from binning
