Update to CLOpenSSL 1.1.10801 (#735)

* Update Carthage to CLOpenSSL 1.1.10801

This brings in updated OpenSSL version and -- more importantly -- Apple
Silicon support for macOS. Now that it's supported, the arm64 exclusion
can be removed from the Xcode project file.

* Update CocoaPods to CLOpenSSL 1.1.10801

This brings Apple Silicon support to CocoaPods distribution, making it
possible to build arm64 applications for macOS.

Note that arm64 is still not available for iOS Simulator. This is the
same old issue with traditional frameworks now allowing multiple slices.

* Switch CocoaPods to CLOpenSSL by default

Make 'themis/openssl-1.1.1' the default subspec (again). Previous
default -- GRKOpenSSLFramework -- is still accessible as
'themis/themis-openssl'.

* Uncomment CLOpenSSL subspec
* Update CHANGELOG
