fix(json-serializer): fixes the JSON serialization to escape quotes on tags (#182)

* fix(json-serializer): fixes the JSON serialization to escape quotes and newlines on tags.

Currently tags aren't being escaped and serialization was failing when adding json payloads as tags or multiline values. This is specially useful when recording request/response payloads.

* fix(json-serializer): avoids heredoc tabs.

* fix(json-serializer): fixes static check error on json encoding failure.

* fix(json-serializer): fixes incorrect parsing of the file.
