chore(package.json): use script "prepublishOnly" instead of "build:release" for publishing a release to prevent accidentally publishing an unbuilt state by explicitly calling "yarn publish"

In contrast to the script "build:release", this script now also executes the command "yarn", such that an explicit call of "yarn" before publishing is not necessary anymore and the command "yarn publish" can be executed from a clean Git repository.
