feat(db): expansion of the DBConfig class for collections

Added a 'collections' field in DBConfig model so that the user can include in the config file collections configurations parameters. Some issues came up in register_mongodb.py regarding accessing certain fields in 'app.config'. The 'mongo.db' instance creation and attachment to 'config' has been commented out
