Rename AccessType -> Access (#740)

* Rename AccessType -> Access

Rename the user-facing `AccessType`/`Access_Type` enum classes to
`Access`.

Rationale: "type" just like "action" are relatively meaningless words
and do only add verbosity. One could have gone for "access_mode" but
`openPMD::Access::READ` is clear enough, especially in combination with the only
usage in `openPMD::Series`.

The old names are still available as (now undocumented) and deprecated aliases
and will be removed in a future version of the library.

* Access: Rename Vars in backends

* Make MSVC 19.0.24241.7 Happy
