openpmd-ls: install in setuptools (#721)

* openPMD-ls: separate `run` function body

* openpmd-ls: install in setuptools

Adds the `openpmd-ls` CLI tool in setuptools (sdist/wheel) installs
for our `pip` install method.

Since we cannot expose binaries as console scripts (grr...), we have
to design entry hooks that can add command line arguments before
calling our C++ logic.
