Fixes/documentation for password complexity validator (#179)

* Improve documentation for PasswordComplexityValidator

The options were missing a couple of options:

- digits
- symbols

It lists all the options here: https://rubydoc.info/gems/devise-security/DeviseSecurity/PasswordComplexityValidator

* Add coverage for `digits` and `symbols`

Make sure that we test the behavior for `{ digits: 2 }` and `{ symbols: 2 }`
