Upgrading to latest Spring Cloud (Hoxton) (#71)

* upgrading to Spring Cloud Hoxton SR3, as recommended by Spring Boot 2.2

* Hoxton.RELEASE + Spring Boot 2.2.1

* upgrading to latest Hoxton and Spring Boot, and configuring binding through functions as now recommended

* removing the StreamListener annotation on the methods

* removing junit-jupiter import, since it's already coming from the parent pom

* excluding junit-vintage-engine : not required since we have only Junit5 in the classpath

* downgrading spring boot to 2.2.4.RELEASE, as 2.2.5.RELEASE is using a strange version of jackson
