Simplify builders and make extensions IntelliJ friendly

- The extensions can now be applied to Writes and Formats, not just OWrites and OFormats, so that
IntelliJ doesn't complain
- When applied to a Writes or Format of any json type distinct from object, they do nothing
- The implicit classes now always return the same type, and all methods can be chained
