WIP: improve compatibility to elasticsearch 7 etc

when using elasticsearch sdk version 7 the criteria query translation
and everything related to (multiple) types in an index needs to change.
This commit is a starting point for all things that need to change:

- the _all field is no longer automatically supported in es7
- there are no types allowed in an index anymore and we would need to
use either indicés w/o types or wrap own '@type' handling for entities
- _default_ mapping changes
- string mapping needs to be "keyword" or "text" for some time now
