Disable the gpg plugin on deploy unless we are perofrming a release

Summary:
[[ https://travis-ci.org/MediaMiser/avogadro/builds/61375270 | Travis CI builds are failing ]] because a plugin is using the following command which triggers the gpg signing plugin (which isn't configured on Travis CI):

```
eval mvn install -DskipTests=true -Dmaven.javadoc.skip=true -B -V
```

This commit adds  build profile that must be activated to trigger the gpg and sonatype plugin that is needed for releases to sonatype (making install act without these plugins).
