Correct expected `Environment` keys for sklearn>=0.21.0

- The 3 blocks defining scenarios for the “test_environment_”-prefixed tests
have been updated to refer to the new `env_keys` variable for their expected
`Environment` key values
- The original expected `Environment` key values (sklearn<0.21.0) are unchanged.
They are simply now stored in the `env_keys` variable
- This is a tricky problem because the code for cross-validation schemes and
metrics has truly changed, so the keys correctly change between
sklearn==0.20.3 and sklearn==0.21.0
- However, in many cases, these changes may be unimportant to the user and the
new `Environment` keys could end up causing more problems
- Another global config variable that defines whether SKLearn callables are
hashed or just saved by name could help mitigate the issue
