junit5: fix WorkflowDefinitionUpdateTest

When running WorkflowDefinitionUpdateTest the database
can contain workflows from earlier tests (when db != h2).

Now for some reason with junit5 the database already
contains stateWorkflow which will fail the test.
Modify the test to use a new workflow which is not used
by any other test.
