Upgrade Junit from 4.x to Junit Jupiter 5.4.0

All of the junit jupiter dependencies had to be explicitly specified to ensure that maven does not grab the wrong version.
It was sometimes grabbing 5.3.2, possibly due to having 5.3.2 already downloaded in the local repository.
