ci: Use Makefile targets & switch on/off coverage

* Use in the CI configuration all the Makefile targets as possible
  rather than executing the same instructions in the same CI
  configuration.
* Disable the test coverage for all the Go versions which the CI runs,
  except on the current stable Go version.
* Remove gofmt because it isn't needed as the current linter tool
  already runs the gofmt.
